Ingredients
  

Vegetables
  • 2 medium cucumbers sliced
  • 1 medium red onion thinly sliced
  • 1 cup cherry tomatoes halved
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey optional
Herbs
  • 2 tablespoons fresh dill chopped

Method
 

Prepare the Vegetables
  1. Slice the cucumbers and red onion thinly. Halve the cherry tomatoes.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, honey, salt, and black pepper.
Combine Salad
  1. In a large mixing bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and chopped dill. Pour the dressing over the salad and toss to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
