Ingredients
  

Base Ingredients
  • 2 cups cottage cheese preferably low-fat
  • 1 cup shredded cheddar cheese or a cheese blend
  • 1/2 cup milk adjust for desired consistency
Flavorings
  • 1 cup diced tomatoes canned or fresh
  • 1 small jalapeño finely chopped, adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Base
  1. In a blender, combine the cottage cheese, shredded cheddar cheese, and milk. Blend until smooth.
Cook the Queso
  1. In a saucepan over medium heat, pour the blended mixture and add the diced tomatoes, jalapeño, garlic powder, onion powder, cumin, salt, and black pepper.
  2. Stir continuously until the mixture is heated through and the cheese is melted, about 10-15 minutes.
Serve
  1. Remove from heat and serve warm with tortilla chips or as a topping for tacos.
