Ingredients
  

Pudding Base
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey for sweetness
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Toppings
  • 1/2 cup fresh berries such as strawberries, blueberries, or raspberries
  • 1/4 cup shredded coconut unsweetened
  • 2 tablespoons nuts or seeds such as almonds or pumpkin seeds

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once thickened, stir the pudding again and divide it into serving bowls.
  2. Top with fresh berries, shredded coconut, and nuts or seeds as desired.
  3. Enjoy chilled.
