Prepare the Chuck Roast
- Season the chuck roast with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned.
Slow Cook
- Transfer the seared chuck roast to a slow cooker. Pour beef broth over the roast.
- Cover and cook on low for 6-8 hours or until the meat is tender and easily shredded.
Assemble Tacos
- Once cooked, shred the chuck roast with two forks and mix it with the juices in the slow cooker.
- Fill warmed corn tortillas with the shredded beef and top with lettuce, tomatoes, sour cream, cheese, and cilantro.
