Ingredients
  

Chuck Roast
  • 2 pounds chuck roast trimmed of excess fat
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Liquid
  • 1 cup beef broth
  • 1 tablespoon olive oil for searing
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup chopped cilantro for garnish

Method
 

Prepare the Chuck Roast
  1. Season the chuck roast with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned.
Slow Cook
  1. Transfer the seared chuck roast to a slow cooker. Pour beef broth over the roast.
  2. Cover and cook on low for 6-8 hours or until the meat is tender and easily shredded.
Assemble Tacos
  1. Once cooked, shred the chuck roast with two forks and mix it with the juices in the slow cooker.
  2. Fill warmed corn tortillas with the shredded beef and top with lettuce, tomatoes, sour cream, cheese, and cilantro.

Notes
