Ingredients
  

Vegetables
  • 2 cups corn kernels fresh or canned
  • 1 cup red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
Seasoning
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chipotle in adobo minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine corn, red bell pepper, red onion, cilantro, and jalapeño.
  2. In a separate small bowl, mix lime juice, chipotle in adobo, salt, and black pepper.
  3. Pour the dressing over the corn mixture and toss gently to combine.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
