Ingredients
  

Salad Base
  • 2 cups shredded cooked chicken can use rotisserie chicken
  • 4 cups mixed salad greens such as romaine and spinach
  • 1 cup shredded carrots
  • 1 cup cabbage shredded, can use green or purple
  • 1 cup cucumber sliced
  • 1/2 cup green onions sliced
  • 1/2 cup mandarin oranges canned or fresh
Dressing
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, salad greens, carrots, cabbage, cucumber, green onions, and mandarin oranges.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat. Garnish with sesame seeds before serving.
