Prepare the Filling
- In a mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, green onions, cumin, chili powder, and garlic powder. Mix well.
Assemble the Egg Rolls
- Place an egg roll wrapper on a clean surface, with a corner pointing towards you. Spoon 2 tablespoons of filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water.
Fry the Egg Rolls
- Heat oil in a deep fryer or frying pan to 350°F (175°C). Fry the egg rolls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare the Dipping Sauce
- In a small bowl, mix ranch dressing with hot sauce, if using. Serve alongside the egg rolls.
