Chili’s Southwestern Egg Rolls

Ingredients
  

Filling
  • 1 cup cooked chicken shredded
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup red bell pepper diced
  • 1 cup green onions chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 package egg roll wrappers
Dipping Sauce
  • 1 cup ranch dressing
  • 2 tablespoons hot sauce optional

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, green onions, cumin, chili powder, and garlic powder. Mix well.
Assemble the Egg Rolls
  1. Place an egg roll wrapper on a clean surface, with a corner pointing towards you. Spoon 2 tablespoons of filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water.
Fry the Egg Rolls
  1. Heat oil in a deep fryer or frying pan to 350°F (175°C). Fry the egg rolls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare the Dipping Sauce
  1. In a small bowl, mix ranch dressing with hot sauce, if using. Serve alongside the egg rolls.

Notes
