Ingredients
  

Chicken Marinade
  • 1 lb chicken breast cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp lime juice
  • 1 tsp curry powder
Peanut Sauce
  • 1 cup peanut butter smooth
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp sriracha optional for heat
  • 1 tbsp water to thin sauce
Garnish
  • 2 tbsp chopped peanuts
  • 2 tbsp fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, vegetable oil, garlic, ginger, lime juice, and curry powder. Add chicken strips and marinate for at least 30 minutes.
  2. Thread marinated chicken onto skewers.
Make Peanut Sauce
  1. In a bowl, whisk together peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and sriracha until smooth. Add water to reach desired consistency.
Grill Chicken
  1. Preheat the grill to medium-high heat. Grill chicken skewers for 5-7 minutes on each side or until cooked through.
Serve
  1. Serve grilled chicken skewers with peanut sauce on the side. Garnish with chopped peanuts, cilantro, and lime wedges.

Notes

For best results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
