Ingredients
  

Chicken and Vegetables
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots) chopped
  • 4 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the chicken breasts, mixed vegetables, 2 tablespoons of olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Toss to coat evenly.
  3. Cut four large pieces of aluminum foil and place equal portions of the chicken and vegetable mixture in the center of each piece.
  4. Drizzle each portion with the remaining olive oil and fold the foil over to create sealed packets.
Cooking
  1. Place the foil packets on a baking sheet and bake in the preheated oven for 30 minutes.
  2. Carefully open the packets (watch for steam) and check that the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  3. Serve the chicken and vegetables directly from the packets or transfer to plates.
