Ingredients
  

Pasta and Chicken
  • 8 oz Penne pasta or any pasta of choice
  • 2 cups Cooked chicken breast diced or shredded
Salad Base
  • 4 cups Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Parmesan cheese grated
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1 tbsp Lemon juice freshly squeezed
  • 1 tsp Garlic minced
Toppings
  • 1/4 cup Croutons optional
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Grill the Chicken
  1. Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, chopped romaine lettuce, cherry tomatoes, and grilled chicken.
  2. In a separate bowl, whisk together the Caesar dressing, lemon juice, and minced garlic. Pour over the salad and toss to coat evenly.
Serve
  1. Transfer the salad to a serving bowl. Top with grated Parmesan cheese, croutons, and chopped parsley. Serve immediately.

Notes

For a lighter version, use grilled shrimp or omit the pasta altogether and increase the amount of lettuce.
