Ingredients
  

Pie Crust
  • 1 batch pie crust store-bought or homemade
Filling
  • 2 cups fresh cherries pitted and halved
  • 2 cups fresh blueberries
  • 3/4 cup granulated sugar adjust based on sweetness preference
  • 2 tablespoons cornstarch for thickening
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
Topping
  • 1 tablespoon butter cut into small pieces
  • 1 tablespoon sugar for sprinkling on top

Method
 

Prepare the Pie Crust
  1. Preheat the oven to 425°F (220°C). Roll out the pie crust and fit it into the pie dish.
  2. Trim and crimp the edges of the crust as desired.
Make the Filling
  1. In a mixing bowl, combine the cherries, blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Toss gently to coat the fruit.
  2. Pour the fruit mixture into the prepared pie crust and dot with butter.
Bake the Pie
  1. Cover the pie with a top crust or lattice, and brush the top with beaten egg. Sprinkle with sugar.
  2. Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  3. Let the pie cool for at least 30 minutes before slicing.
