Ingredients
  

Bars
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Frosting
  • 8 oz cream cheese softened
  • 1/4 cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 tablespoon lemon juice

Method
 

Prepare the Bars
  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the eggs, vegetable oil, grated carrots, and grated zucchini until well combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely before frosting.
Prepare the Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar, mixing until well incorporated.
  3. Stir in the vanilla extract, orange zest, and lemon juice until smooth and creamy.
  4. Spread the frosting over the cooled bars.
