Method
Prepare the Strawberries
- Wash and dry the strawberries thoroughly. Make sure they are completely dry to ensure the syrup adheres properly.
Make the Sugar Syrup
- In a saucepan, combine the granulated sugar, water, and corn syrup. Stir over medium heat until the sugar dissolves.
- Bring the mixture to a boil and let it cook until it reaches the hard crack stage (300°F or 150°C) on a candy thermometer.
Candy the Strawberries
- Remove the saucepan from heat and let it cool for a minute. Dip each strawberry into the syrup, allowing excess syrup to drip off.
- Place the dipped strawberries on a sheet of parchment paper to cool and harden.
