Ingredients
  

Strawberries
  • 1 pound fresh strawberries washed and dried
Sugar Syrup
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon corn syrup to prevent crystallization

Method
 

Prepare the Strawberries
  1. Wash and dry the strawberries thoroughly. Make sure they are completely dry to ensure the syrup adheres properly.
Make the Sugar Syrup
  1. In a saucepan, combine the granulated sugar, water, and corn syrup. Stir over medium heat until the sugar dissolves.
  2. Bring the mixture to a boil and let it cook until it reaches the hard crack stage (300°F or 150°C) on a candy thermometer.
Candy the Strawberries
  1. Remove the saucepan from heat and let it cool for a minute. Dip each strawberry into the syrup, allowing excess syrup to drip off.
  2. Place the dipped strawberries on a sheet of parchment paper to cool and harden.

Notes

For best results, use fresh, firm strawberries. You can also add food coloring to the syrup for a fun twist.
