Prepare the Kiwi

- In a saucepan, combine the sugar, water, and corn syrup. Heat over medium heat, stirring until the sugar dissolves.
- Bring the mixture to a boil and cook until it reaches 300°F (hard crack stage) on a candy thermometer.
Coat the Kiwi
- Remove the syrup from heat and let it cool for a minute.
- Quickly dip each skewer of kiwi into the syrup, ensuring it is fully coated.
- Place the coated kiwi skewers on a baking sheet lined with parchment paper to cool and harden.
