Ingredients

  • 4 medium kiwi peeled and cut into wedges
Sugar Syrup
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon corn syrup to prevent crystallization

Method
 

Prepare the Kiwi
  1. Skewer the kiwi wedges onto wooden skewers, spacing them evenly.
Make the Sugar Syrup
  1. In a saucepan, combine the sugar, water, and corn syrup. Heat over medium heat, stirring until the sugar dissolves.
  2. Bring the mixture to a boil and cook until it reaches 300°F (hard crack stage) on a candy thermometer.
Coat the Kiwi
  1. Remove the syrup from heat and let it cool for a minute.
  2. Quickly dip each skewer of kiwi into the syrup, ensuring it is fully coated.
  3. Place the coated kiwi skewers on a baking sheet lined with parchment paper to cool and harden.
