Ingredients
  

Base
  • 2 cups cooked rice white or brown
  • 1 can black beans drained and rinsed
Protein
  • 1 lb chicken breast diced
  • 1 tbsp olive oil for cooking
Toppings
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 avocado sliced
  • 1 cup sour cream optional
  • 1 cup shredded cheese optional
  • 1 bunch cilantro chopped
  • 1 lime juiced
Spices
  • 1 tbsp taco seasoning
  • 1 tsp salt to taste

Method
 

Cook the Protein
  1. Heat olive oil in a skillet over medium heat. Add diced chicken and taco seasoning. Cook until chicken is browned and cooked through, about 7-10 minutes.
Prepare the Base
  1. In a large pot, combine cooked rice and black beans. Heat over low until warmed through.
Assemble the Bowl
  1. In serving bowls, layer the rice and bean mixture, followed by the cooked chicken, corn, cherry tomatoes, lettuce, avocado, and any additional toppings.
  2. Drizzle with lime juice and top with cilantro.
