Blueberry Compote Ingredients
  • 2 cups fresh blueberries or frozen
  • 1/4 cup granulated sugar adjust to taste
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract optional
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons water to mix with cornstarch

Method
 

Cooking the Compote
  1. In a saucepan over medium heat, combine the blueberries, sugar, and lemon juice.
  2. Cook for about 5-7 minutes, stirring occasionally, until the blueberries start to break down.
  3. In a small bowl, mix the cornstarch with water to create a slurry.
  4. Add the cornstarch mixture to the saucepan and stir well.
  5. Continue to cook for another 3-5 minutes until the compote thickens.
  6. Remove from heat and stir in the vanilla extract if using.
  7. Let cool slightly before serving.
