Ingredients
  

Beans
  • 2 cups black beans soaked overnight and drained
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 1 cup tomatoes diced
Spices
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 4 cups vegetable broth
Garnish
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cooking the Beans
  1. In a pot, heat a bit of oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the soaked black beans, diced tomatoes, cumin, smoked paprika, salt, and black pepper.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low and let simmer for about 30 minutes, or until the beans are tender.
  5. Adjust seasoning if necessary.
Serving
  1. Serve hot, garnished with chopped cilantro and lime wedges.
