Ingredients
  

Berries and Cream
  • 2 cups heavy cream chilled
  • 1/2 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries such as strawberries, blueberries, and raspberries
  • 1 package graham crackers about 14-16 crackers

Method
 

Prepare the Cream
  1. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Layer the Ingredients
  1. In the loaf pan, create a layer of graham crackers, followed by a layer of whipped cream and a layer of mixed berries. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream and berries on top.
Chill
  1. Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
Serve
  1. Once chilled, slice the icebox cake and serve immediately. Enjoy!
