Beef Bulgogi Bowl

Ingredients
  

Beef Marinade
  • 1 pound beef sirloin thinly sliced
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 tablespoon gochujang Korean chili paste
  • 2 green onions scallions chopped
Bowl Components
  • 2 cups cooked rice white or brown rice
  • 1 cup carrots julienned
  • 1 cup cucumber sliced
  • 1 cup spinach blanched
  • 2 tablespoons sesame seeds for garnish

Method
 

Marinate the Beef
  1. In a mixing bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang. Mix well.
  2. Add the sliced beef and chopped scallions to the marinade. Toss to coat and let it marinate for at least 30 minutes.
Cook the Beef
  1. Preheat the grill or a skillet over medium-high heat.
  2. Cook the marinated beef for about 5-7 minutes, or until cooked through, stirring occasionally.
Assemble the Bowl
  1. In a bowl, place a serving of cooked rice.
  2. Top with cooked beef, julienned carrots, sliced cucumber, and blanched spinach.
  3. Garnish with sesame seeds and additional scallions if desired.
