Ingredients
  

Salmon Bites
  • 1 lb salmon fillet cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1 large egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon lime juice
Bowls
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup green onions sliced
  • 1 cup avocado sliced

Method
 

Prepare the Salmon Bites
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Dip each salmon piece into the beaten egg, then coat with the breadcrumb mixture.
  4. Place the coated salmon bites on a baking sheet and bake for 12-15 minutes or until golden brown.
Make the Bang Bang Sauce
  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with salmon bites, cucumber, carrots, green onions, and avocado.
  3. Drizzle with Bang Bang sauce and serve immediately.
