Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Cinnamon Filling
  • 1/2 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter softened
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine mashed bananas, melted butter, sugar, egg, and vanilla extract. Mix until smooth.
  2. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
Make the Filling
  1. In a small bowl, mix together brown sugar, cinnamon, and softened butter until well combined.
Assemble the Buns
  1. On a floured surface, roll out the dough into a rectangle. Spread the cinnamon filling evenly over the dough.
  2. Roll the dough tightly into a log, then slice into 1-inch pieces. Place the slices in a greased baking dish.
Bake
  1. Bake in the preheated oven for 25-30 minutes or until golden brown.
  2. While the buns are baking, prepare the icing by whisking together powdered sugar, milk, and vanilla extract until smooth.
Serve
  1. Once baked, drizzle the icing over the warm cinnamon buns and serve immediately.
