Ingredients
  

Salad Base
  • 2 pounds baby potatoes halved or quartered
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh basil chopped
Dressing
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Potatoes
  1. Place the baby potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine Salad
  1. In a large mixing bowl, combine the cooled potatoes, cherry tomatoes, cucumber, red onion, and basil. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld before serving.
