Bacon Swiss Chard Potatoes au Gratin

Ingredients
  

Vegetables
  • 4 medium potatoes thinly sliced
  • 1 bunch Swiss chard stems removed and chopped
Meat
  • 6 slices bacon cooked and crumbled
Dairy
  • 2 cups heavy cream
  • 1 cup Swiss cheese shredded
  • 1 cup cheddar cheese shredded
  • 1 cup milk
Seasonings
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme dried

Method
 

Prepare Ingredients
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the bacon until crispy. Remove and crumble, reserving some drippings.
  3. In the same skillet, sauté the chopped Swiss chard in the reserved bacon drippings until wilted. Set aside.
Assemble the Dish
  1. In a mixing bowl, combine heavy cream, milk, garlic, salt, pepper, and thyme.
  2. In a baking dish, layer half of the sliced potatoes, followed by half of the Swiss chard, half of the crumbled bacon, and half of the cheese mixture. Repeat the layers.
  3. Top with remaining cheese.
Bake
  1. Cover the baking dish with aluminum foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  3. Let it cool for a few minutes before serving.
