Ingredients
  

Salad Base
  • 2 cups mixed salad greens such as romaine and spinach
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1/2 cup green onions chopped
Chicken
  • 2 cups grilled chicken breast sliced
Dressing
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon garlic minced
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked. Let rest and then slice.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed salad greens, shredded carrots, cucumber, red bell pepper, and green onions.
  2. Add the sliced grilled chicken on top.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Garnish with sesame seeds before serving.
