Cake
  • 1 cup almond flour
  • 1 cup shredded coconut unsweetened
  • 1/2 cup sugar
  • 1/2 cup butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting
  • 1 cup powdered sugar
  • 2 tablespoons butter softened
  • 1 tablespoon coconut milk
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the almond flour, shredded coconut, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Prepare the Frosting
  1. In a mixing bowl, combine the softened butter, powdered sugar, coconut milk, and vanilla extract.
  2. Beat until smooth and creamy.
  3. Once the cake is completely cooled, spread the frosting evenly over the top.

Notes
