Ingredients
  

Brisket
  • 4 pounds beef brisket preferably with a good fat cap
Rub
  • 2 tablespoons smoked paprika
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups hickory or oak wood chips soaked in water for at least 30 minutes

Method
 

Prepare the Brisket
  1. Trim excess fat from the brisket, leaving about 1/4 inch of fat on top.
  2. Combine all rub ingredients in a bowl and mix well.
  3. Rub the spice mixture all over the brisket, ensuring it is evenly coated.
Preheat the Smoker
  1. Preheat your smoker to 225°F (107°C).
  2. Add the soaked wood chips to the smoker box or directly on the coals.
Smoke the Brisket
  1. Place the brisket in the smoker, fat side up.
  2. Smoke for approximately 5-6 hours, or until the internal temperature reaches 195°F (90°C).
Rest the Brisket
  1. Remove the brisket from the smoker and wrap it in foil.
  2. Let it rest for at least 30 minutes before slicing.
Serve
  1. Slice the brisket against the grain and serve with your favorite barbecue sauce.

Notes
