Method
Prepare the Brisket
- Trim excess fat from the brisket, leaving about 1/4 inch of fat on top.
- Combine all rub ingredients in a bowl and mix well.
- Rub the spice mixture all over the brisket, ensuring it is evenly coated.
Preheat the Smoker
- Preheat your smoker to 225°F (107°C).
- Add the soaked wood chips to the smoker box or directly on the coals.
Smoke the Brisket
- Place the brisket in the smoker, fat side up.
- Smoke for approximately 5-6 hours, or until the internal temperature reaches 195°F (90°C).
Rest the Brisket
- Remove the brisket from the smoker and wrap it in foil.
- Let it rest for at least 30 minutes before slicing.
Serve
- Slice the brisket against the grain and serve with your favorite barbecue sauce.
