Ingredients
  

Pie Crust
  • 1 pre-made pie crust or homemade
Berry Filling
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 3/4 cup sugar divided
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
Whipped Cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. In a mixing bowl, combine strawberries, blueberries, raspberries, 1/2 cup of sugar, cornstarch, lemon juice, and vanilla extract. Stir gently to combine.
  2. Let the mixture sit for about 10 minutes to allow the berries to release their juices.
Preheat Oven
  1. Preheat your oven to 375°F (190°C).
Assemble the Pie
  1. Pour the berry mixture into the prepared pie crust, spreading it evenly.
  2. Using a spatula, create swirls in the filling for a decorative effect.
Bake the Pie
  1. Bake in the preheated oven for 30-35 minutes, or until the filling is bubbly and the crust is golden brown.
Prepare Whipped Cream
  1. While the pie is baking, whip the heavy cream, powdered sugar, and vanilla extract in a mixing bowl until soft peaks form.
Serve
  1. Allow the pie to cool for at least 15 minutes before slicing. Serve with a dollop of whipped cream on top.
